Featuring the Pacas and Caturra varieties, the lots here benefit from a cool microclimate that lengthens the maturity process of the coffee cherries, allowing beans more time to absorb natural sugars and other attributes that contribute to a rounded cup profile.
Local pickers are trained to pick only the reddest cherries, ensuring each crop reaches its full potential with the highest level of sweetness. The estate uses a honey process that is on the black honey end of the spectrum with a particular focus on the preservation of mucilage. This results in more complex and clear fruit cupping notes.
